Banana Bread
Ingredients
- 5 ripe bananas
- 150 grams of melted butter
- ½ cup of brown sugar
- ¼ cup of maple syrup
- 2 lightly beaten eggs
- 2 teaspoons vanilla extract
- 1 ½ cups of self-raising flour
- ½ cup of plain flour
- 1 teaspoon of ground cinnamon
- ½ cup of milk
Instructions
- Preheat oven to 160C.
- Grease a baking tin.
- Mash bananas in a bowl.
- Add butter, brown sugar, maple syrup, egg, vanilla extract.
- Using a wire whisk, stir until combined.
- Fold in combined sifted flours and cinnamon.
- Stir in milk until combined.
- Spoon mixture into pan and smooth the surface.
- Bake for 1 hour or until a skewer inserted into the center comes out clean.
- Leave in tin for 30 minutes.
- Transfer to a wire rack to cool.
Spiced Biscuits
Ingredients
- 200 grams of chopped butter
- 1 cup of brown sugar
- 1/2 cup of maple syrup
- 2 1/2 cups of self-raising flour
- 1 teaspoon of ground cinnamon
- 1 teaspoon of ground nutmeg
Instructions
- Preheat oven to 180°C.
- Grease 2 oven trays.
- In a small saucepan, combine butter, sugar and maple syrup.
- Stir over a low heat until melted and combined.
- Transfer to a large bowl.
- Beat mixture until light and fluffy. Allow to cool.
- Sift flour and spices together. Fold into butter mixture until well combined.
- Roll tablespoonfuls of mixture into balls.
- Arrange on trays, allowing a little space between each.
- Flatten slightly with a fork. Bake for 12-15 minutes, until golden.
- Transfer to a wire rack to cool.
