Banana Bread

A simple banana bread, adapted and simplified to its bare essentials.
Ingredients
- 5 ripe bananas
- 150 grams of melted butter
- ½ cup of brown sugar
- ¼ cup of maple syrup
- 2 lightly beaten eggs
- 2 teaspoons vanilla extract
- 1 ½ cups of self-raising flour
- ½ cup of plain flour
- 1 teaspoon of ground cinnamon
- ½ cup of milk
Instructions
- Preheat oven to 160C.
- Grease a baking tin.
- Mash bananas in a bowl.
- Add butter, brown sugar, maple syrup, egg, vanilla extract.
- Using a wire whisk, stir until combined.
- Fold in combined sifted flours and cinnamon.
- Stir in milk until combined.
- Spoon mixture into pan and smooth the surface.
- Bake for 1 hour or until a skewer inserted into the center comes out clean.
- Leave in tin for 30 minutes.
- Transfer to a wire rack to cool.
Alternatives
No Self-Raising Flour, No Maple Syrup/Vanilla Extract
Ingredients

- 2 1/2 teaspoons of baking powder
- 2 teaspoon of ground cinnamon
- 1/2 cup of milk
Instructions
- Preheat oven to 160C.
- Grease a baking tin.
- Mash bananas in a bowl.
- Add butter, brown sugar, egg, vanilla extract.
- Using a wire whisk, stir until combined.
- In a separate bowl, sift together all plain flour (2 cups total), baking powder, and cinnamon.
- Fold the dry ingredients into the banana mixture.
- Stir in milk until combined.
- Spoon mixture into pan and smooth the surface.
- Bake for 1 hour or until a skewer inserted into the center comes out clean.
- Leave in tin for 30 minutes.
- Transfer to a wire rack to cool.
